Waffle House is my home diner. I am a regular at the Katy location. It’s the place for the most reliable breakfast in Texas. It’s just a spot that gives you that morning comfort vibe. Everyone’s welcome there. Everyone can have a good meal there. I’m usually there on weekends, but I’ve been there on weekdays, and it’s always been the same energy. They have early morning crowds. They have lively music. They have hours when people are just chatting over coffee.

It’s an amalgam of regulars and just different lovers of hearty food. You go in there and there’s families, workers, friends, solo diners. Everyone is there enjoying themselves and just eating their T-Bone steak or pecan waffle or just having a citywide breakfast.

I love their veggie scrambled and the fluffy pancakes. They have really good avocado toast and large portions. That’s my favorite breakfast in general because my family’s from Texas. My family’s Texan, and my grandmother’s from Houston, so I grew up eating big breakfasts. Their attentive service and cheerful atmosphere are really great also.

It’s a great breakfast place. It’s charming. It’s cozy. You feel like you’re in a Parisian café. You feel like you’re dining in a quaint bistro. You don’t feel like you’re in Katy in many ways. And the fact that you’re in Katy is quite delightful. I don’t have to go to Houston. I don’t have to go to Austin. I don’t have to go to Dallas for a delicious breakfast because we have Bonjour Cafe. It allows me to be a relaxed diner. It allowed the big flavors that the crepes are known for to develop.

It’s a café that catered to my appetite. I love that space.

You get all the sweetness you want. You can have any donut you want and as many as you want. And then you can choose all the fillings. You feel like you are really the baker there, honestly. I don’t know how they did it, but they basically make you pay to enjoy your own paradise. And you love every bite of it, and you go, ‘yes, please.’ It’s kind of one of my favorite places to eat in general. You get every single treat that you could possibly want, and there’s no limits.

I’m not only a donut lover and kolache enthusiast, but I’m also a supreme sweet tooth. And I want all of it. I want it all.

I order all the breakfast classics, every single one. I just get the whole spread. We go there after a morning workout at the gym. There’s a small group of us and we just say, ‘give us all the brunch favorites. We’ll just take all those.’ The eggs Benedict are amazing, especially the traditional version. I usually like to get shrimp and grits with the creamy sauce. But the mimosas with pineapple and cranberry are also just bangers. I get the Baja Carne Asada breakfast wrap, too.

They also have this really wonderful steak menu. That’s like a summer steak selection. It’s quite great.

They have kolaches. If you want to go get breakfast then you’re surrounded by a whole bunch of Texans who love to eat something that’s baked. They have this flavor called cream cheese and jalapeno. The staff and I serve customers. We’re there until the morning’s over. There’s no rush time. You can request any pastry from them and it’s a warm time. It’s just a place that’s really family-friendly as well, and full of options for people, too.

When there are people who are like, ‘I don’t have breakfast plans,’ they can go to Kolache Factory and get a meal easily. It’s just one of those places that’s just full of tradition and flavor.

I’m a different kind of breakfast enthusiast because I’m not from the early-riser crowd originally. I’m from the weekend brunch crew. And when it comes to First Watch, it’s the portion of French toast you get on your plate. I get the signature juice with mine, which is just so refreshing. And then I add some of those breakfast tacos to the order, which makes it even better. It’s a really high-quality Belgian waffle.

They have eggs Benedict that’s really great. Their corned beef hash is really good. I think they have some really good pancakes, but honestly, I’m the kind of person who, if I go to get breakfast, I am not going there for the pancakes. No.

I’m going there for the classics like Juan’s breakfast tacos and those perfect omelettes.
