This is the first place we make reservations at when someone from out of state tells us they’re visiting. Every sushi dish is fantastic, from the house roll and Sunshine Roll, to the Ankimo, which is one of the most delicious plates of food we’ve ever eaten. And we’ve yet to find a scenario where coming here isn’t a great idea.
Come here on a date, come with a group, or come alone and sit facing the sushi bar so you can smile maniacally at all the fish you can’t wait to consume.

And while plenty of Colorado spots serve fantastic ramen in places that feel like chain restaurants, the best thing about Volcano Ramen is that it doesn’t really feel like anything else.

Matsumotto expertly walks the tightrope of feeling special without being pretentious.

This fun family-run Japanese spot in the Westminster shopping plaza has been serving consistently satisfying meals since it opened, long before the area became known for healthy dining options.
The unassuming exterior next to the highway hasn’t changed since the plaza was just another strip mall, and inside they’re making some of the most delicious poke bowls and ramen in the city. And now that Rocky Fin’s punch card system offers rewards with every visit, it provides a way better dinner option than we deserve.
Sakana

Sakana will do more to improve your quality of life than a team of personal assistants ever could. Not only does this Japanese restaurant in Westminster have the best sushi we’ve encountered in Colorado, but it’s also a delight. The cozy, full-service restaurant has waitresses that make us smile, high-quality fish, and hot plum sake that isn’t too sweet.
Along with sushi, the menu has classics like ramen and a rich katsu curry that’s especially lovable because a little fried cutlet cheerfully pokes out of it—encouraging you to accept things as they are. And while Sakana is extremely casual, it’s still a great place to celebrate a birthday, promotion, anniversary, or your fictitious personal assistant’s birthday.
