It’s buzzing with energy and an open hibachi grill that makes it a fun place to gather with friends after work. Open for years now, this is Easton’s go-to spot for sushi. It’s refreshingly straightforward—think clean tables and bright lighting, simple decor, and a spacious dining area that’s easy to navigate. The local favorite uses that dedication to freshness to serve up top-tier rolls like the Spicy Yellowtail Roll, which was so fresh it didn’t need wasabi, and the Green Tea Ice Cream Tempura, which is a perfect finish.
And even though the food tastes premium with flavors that feel like they belong at a high-end spot, you can eat here without breaking the bank—none of the rolls cost more than $18, and the fried rice is a steal at $12.
Koja Cuisine Korean BBQ and Sushi

There’s only one place in Easton where you can get fantastic Korean BBQ and sushi while K-pop plays, and that’s Koja Cuisine. The restaurant is welcoming, to say the least—there’s a wheelchair-accessible entrance and a warm glow from the open kitchen—but they take their food seriously. The staff talks about the love put into the dishes, from the boneless honey fried chicken to the BBQ grill meats, side dishes, soups, and appetizers, and why the honey garlic wings keep guests returning.
The result is consistently excellent, flavorful dishes—like the vegan and gluten-free options—that you won’t find at other spots in town. The restaurant has perfected a couple of things: generous portions with special touches like traditional birthday soup, and helping us celebrate our milestones for just one night.
Tokyo Sushi

Tokyo Sushi is a sushi bar, but it’s also a quintessential Easton dining experience. It’s been around for years, and is still outfitted with warm wood accents and soft lighting, cozy booth seating, and touches that make it feel like a neighborhood favorite. The staff has as much personality as the food itself (and the owners have been there from the start).
The menu ranges from customizable sushi and poke bowls with fresh ingredients, but we’re partial to the vegetarian specialties, like the veggie dumplings and sweet potato rolls (and if you have dietary restrictions, the owner will accommodate you with generous portions, too).
